Holiday Prime Rib Roast
Prime Rib Rub
1 Prime Rib Roast 7-8 lbs (or about 4-5 ribs)
Directions
Ask the butcher for the small end of the Prime.
Season generously on all sides with our Prime Rib Rub,
Place Roast bone side down in a hot pre-heated oven at 450 degrees for 15 minutes.
Reduce the oven temperature to 250 degrees and cook about 20 to 30 minutes per pound.
Test the beef with a meat thermometer in the thickest part of the roast (center of the eye) being truthful not to touch the bone. Take off the roast when the internal temperature reaches 130 degrees for rare, 140 for medium rare or 150 degrees for medium.
Cover the roast loosely with aluminum foil and let sit for 1/2 hour. The internal roast temperature will continue to rise about 5 degrees even after you take it out of the oven.

Directions
Season Prime Rib Roast with Jsgs Prime Rib Rub on all sides, Sprinkle lightly with Smoky Mesquite Salt on all sides. Place Roast in Smoker. Add Apple Wood or your favorite wood agreeing to mfg. Instructions. Smoke @ 225 degrees for 4-6 hrs depending on desired doneness growth smoking times for medium or medium well. Enjoy!

Directions
De-bone and Take off fat from roast, start at 1" from edge of roast place 2 forks in meat and pull away from each other forming shreds of meat or slice thin place in pot sprinkle with 1-2 Tbsp Beyond the Border, 1-2 Tbsp water, 1-2 Tbsp Jalapeño Vinegar to keep moist, white onion chopped, cover, heat on low till warm throughout. Turn oven on 300 degrees, place taco shells on oven rack, heat 5-6 minutes watch close! Take off shells; fill with shredded Prime Rib meat, cheese, onion, lettuce, jalapeños, tomato, salsa to taste. Enjoy!

How to Make Venison Bacon
Bacon is one of life's best indulgences. The smell, the taste...it doesn't get better! Unfortunately, if you want venison bacon, you'll have to make it (or have your meat processor do it). You can use it just as you would pork bacon-either adding it to recipes or eating it plain. Here is the best method I've found so far. I don't know who originally came up with this recipe, but I'm grateful every time I eat it!
You will need a meat abrasive (or abrasive attachment) and smoker, which are requisite cooking tools for venison lovers!
For 25 lbs of venison bacon, you'll need half venison and half pork trimmings (50% meat/50 fat). If 25 lbs sounds like a lot of bacon, remember you can freeze it.
The spices and cure are what in effect make the venison bacon tasty, and hold it. Buying a pre-made spice kit is the easiest way to go about production sure you have the right blend. You'll smoke the meat at 130 for 1 hour, then turn up the temperature to 160 and smoke for 2 more hours. After smoking, Take off the meat from the rack and put it in the oven at 180 for 4 hours, or until the internal temperature of the meat reaches 155.
Allow the bacon to sit out until it reaches room temperature and then refrigerate it overnight. You can then slice it into strips. Holder it into 1 lb packs and freeze for use throughout the year. Enjoy!

Chocolate Cookie method - Chocolate Dipped Lebkuchen Cookies
These are a hard cookie with a delicate taste of spice and honey.

6. Using a table knife stir the composition until a soft dough is formed.
8. Shape the dough into a ball. At this stage if you feel that the dough is too soft to roll, wrap in plastic and place in the refrigerator for about 1 hour or until it firms up.
9. Roll the dough to 7mm (0.3 inch).
10. Using a cookie cutter, cut into heart shapes (or other shapes) about 6cm (2.4 inch) wide.
11. Using a spatula moderately lift and place the cookie shapes onto the ready trays. Lightly knead the excess dough together and roll out again and cut out more shapes, do this until all the dough is all used up.
12. Bake for about 25 minutes or until lightly golden brown. take off from the oven and cool on wire racks.
13. Melt the white chocolate in a small heatproof bowl. Place the bowl over a pan of simmering water and stir until the chocolate has melted. take off from the heat.
14. Dip one half of the lebkuchen cookies into the chocolate.
15. Place the cookies onto grease proof paper until the chocolate has set.
16. If you want a decorated cookie use colored sprinkles, chopped toasted nuts etc., do this before the chocolate sets. You may like to dip and decorate a few at a time rather than dipping all the cookies at once, and looking that the chocolate has set before you get to the last one.

Slide the dowel into the other side piece hole and glue the hole, as well as that side piece into the back panel, also nailing it in.

Glue and nail in the bottom piece.
Step 11:

I don't know who originally came up with this recipe, but I'm grateful every time I eat it!
You will need a meat grinder (or grinder attachment) and smoker, which are essential cooking tools for venison lovers!
For 25 lbs of venison bacon, you'll need half venison and half pork trimmings (50% meat/50 fat). If 25 lbs sounds like a lot of bacon, remember you can ice it.
The spices and cure are what unmistakably make the venison bacon tasty, and sustain it. Buying a pre-made spice kit is the easiest way to go about production sure you have the right blend. Allow the bacon to sit out until it reaches room temperature and then refrigerate it overnight. You can then slice it into strips. Holder it into 1 lb packs and ice for use throughout the year. Enjoy!
